About our olive oil

Does olive oil have an expiration date?

Olive oil is can last 12-24 months from when you open it. If stored away from heat and light in a well-sealed container, it will last longer.

Can I store my olive oil in a plastic bottle?

Studies have shown that plastic bottles can be detrimental to the integrity of olive oil as plastic materials may leach harmful chemicals into the oil over time, compromising its taste and nutritional value. The best way to store olive oil is in a glass, ceramic or non-reactive metal container to preserve the flavor and health benefits.

Additionally, unlike many plastic containers, glass, ceramic and metal containers are more environmentally friendly options as they are recyclable and can be reused multiple times, reducing our carbon footprint and contributing to a healthier planet.

Is it safe to cook olive oil at a high temperature?

It is a myth that you cannot cook olive oil at high heat. Research shows that not only is extra virgin olive oil safe when cooked at high heat, it is more chemically stable at those temperatures than other common cooking oils. Even when heated past its smoke point, extra virgin olive oils produce low levels of harmful compounds due to the high antioxidant content in the oil.

What makes olive oil "extra virgin"?

Extra virgin olive oil is the highest grade of olive oil and is prized for its exceptional quality, flavor and health benefits. According to the International Olive Oil Council, extra virgin olive oil is defined as oil obtained solely from the fruit of the olive tree (Olea europaea) using specific harvesting and pressing techniques and using olives that have not undergone any treatment other than washing, decantation, centrifugation and filtration. While there are a variety of factors that go into the "extra virgin" designation, these stringent standards ensure that extra virgin olive oil maintains its natural characteristics, including low acidity levels, superior taste and high levels of antioxidants and healthy fats.

What makes your olive oil peppery?

The peppery flavor in olio nuovo comes from the presence of polyphenols, which are natural antioxidants found in olives. During the early stages of the olive harvesting season, typically in October, olives are picked when they are still green and not fully ripe. These early harvest olives contain higher levels of polyphenols compared to olives harvested later in the season. The peppery taste sensation, often described as a "spicy" or "pungent" sensation at the back of the throat, is a characteristic of these polyphenols, particularly a compound called oleocanthal. Pepperiness can also vary depending on the olive variety, region and production method.

Is green olive oil better than yellow?

A vibrant green olive oil is traditionally seen as a sign of higher quality and freshness due to its rich concentration of chlorophyll, polyphenols and other natural compounds found in freshly harvested olives. A green hue signifies a robust flavor profile and a higher content of antioxidants, which contribute to the oil's health benefits and longevity. These compounds not only lend the oil its characteristic color but also provide protection against oxidative damage and enhance its flavor complexity.

Is olive oil a juice or oil?

Olives are a type of fruit called a drupe. Extra virgin olive oil is actually the juice of an olive with the water and solids (pits and flesh) filtered out. Technically, extra virgin olive oil is not a seed oil but rather a liquid fat obtained by crushing the olives. Despite this, due to its oil-like properties we use it in the kitchen like any other cooking oil. In fact, many people enjoy a tablespoon of olive oil every morning for its health benefits.

What is the donkey in your logo?

For centuries, Sicilian farmers relied on donkeys as indispensable partners in the cultivation, transportation and harvesting of olives and olive oil. Donkeys were instrumental in navigating the rugged terrain of Sicilian olive orchards and narrow village streets that machinery could not reach. They also pulled the heavy millstone that would grind the olives into a paste during the milling process. While technological advancements have largely replaced donkeys with mechanized equipment in contemporary olive oil production, the legacy of Sicilian donkeys in the industry remains a testament to the island's rich agricultural heritage and the enduring bond between Sicilians and their land.

Why is Sicilian olive oil so special?

Olive oil is not just an ingredient but also a reflection of Sicily's terroir, culture and people. For centuries, olive cultivation has been deeply intertwined with the Sicilian identity, shaping traditions, customs and livelihoods across the island. Olive oil has also been extracted from the land for medicinal, religious, cosmetic and industrial uses. Olive oil serves as a tangible link to Sicily's rich history, bearing witness to the legacies of ancient civilizations, conquests and cultures that have left an indelible mark on the island.
